Buckwheat malt – unique & new type of malt, no analogues throughout Russia presented on Brau Beviale 2018 (Nurnberg, Germany)

Kursk malt company plant — it is here that a buckwheat malt is produced — in the city of Kursk. This is a unique and new type, which has no analogues throughout Russia.

The malt house has been operating for 6 years. Currently, the production capacity is 120 thousand tons for pale malt and 7 thousand tons for special malts. The plant produces 17 types of malt. Recently, the production of buckwheat malt began. This novelty appeared in March 2017.

Buckwheat is one of the most promising sources of raw materials in the production of malt. This is due to the fact that it is a gluten-free culture, which allows its use in diet food and production of gluten-free beer.

Buckwheat malt is used to produce malt beverages and kvass, bakery and confectionery products. It is also used as an additional ingredient for the manufacture of combined meat and fish semi-finished products, dairy, macaroni products, gerodietetic products, child and sport nutrition.

Buckwheat malt production consists of three main stages: soaking, growing and drying.

Production of buckwheat malt is a unique process. For the technologist, an important task is not to miss the moment of malt feed for drying, in order to get a quality product. The control of purchased buckwheat is conducted by the laboratory receiving malt in accordance with the approved specification for organoleptic and physicochemical indicators: appearance, humidity, black and grain dockage, pest infestation, energy and germinating property.

After the end of the drying process, the malt is cooled and a sample is taken to control malt quality indicators.

Breweries in Russia and Germany tested our buckwheat malt already.
